build: use portable sed expressions

* src/Makefile.am (libvirt.def, libvirt_qemu.def): '\}' and '\t'
are not required by POSIX.  Use '}' and literal tab instead.
(install-data-local): Avoid sed -i.
* tests/read-bufsiz: Likewise.
